Lazy Broccoli Soup {A Lazy Mom Recipe}

My wonderful, amazing, loving Aunt (these attributes clearly run in the family) sent me a totally awesome 4 ingredient broccoli soup recipe!

I only slightly tweaked it to get it to a more soupy texture and y’all, it’s amazing!

And LAZY.

It only dirties one pot and takes less than 20 minutes to make – most of which does not require you standing at the stove!  Perfect for a weeknight dinner when you just don’t know what to make.  Woot!

Oh! And if you are a Trim Healthy Mama, you can enjoy this soup in a ‘Heavy S’ setting.  Yum!

Lazy Broccoli Soup
makes 4 cups

1 (10 oz) bag of frozen broccoli
3 cups canned chicken broth
8 ounces cream cheese
1 cup grated cheddar cheese

This is so simple!  Boil the broccoli in the chicken broth for 15 minutes.  I noticed that my broccoli florets were quite un-bite sized, so I ran my knife through them when the broccoli was soft, but realized this probably wasn’t necessary as in the end the broccoli breaks down enough on it’s own.

Once it’s boiled for 15 minutes, throw in the cream cheese and the cheddar cheese (I didn’t have cheddar, so I used sharp — totally yum!) and stir until melted!

That’s it!  Bim-bam-BOOM, it’s done!

As a totally optional ingredient, you can garnish the served-up soup with bacon bits and a sprinkle of more cheese, but this soup is plenty cheesy!  SO good!
