Would you believe that I have had a yummy recipe just sitting in my inbox waiting to be shared with all of you since October? Would you ALSO believe that I have had a windowless basement window for the last 9 years?

Procrastination is real folks.  And I’m good at it.

But, just as the windows in my basement finally got replaced, it’s time to throw down some procrastinated Lazy Mom Recipes. Amie D. sent this in and says it’s a hit at her house!  Here’s what she said exactly….

“My family loves these potatoes as a side at dinner. The coworkers in my office LOVE it when it’s my turn to bring in Friday breakfast and I bring these.”

So without further procrastination, here is Amie’s recipe!

Anytime Potatoes

2.5 pounds potatoes (I use baby red potatoes because they’re easier to chop)
1 Red Bell Pepper
1 White Onion
2 TBSP Montreal Steak Seasoning
1/4 c Olive Oil

1. Chop potatoes to bite sized pieces (leave skin on!)
2. Slice onion
3. Chop bell pepper to bit sized pieces
4. Sprinkle with Grill seasoning
5. Douse in oil
6. Mix it all on a cookie sheet. Bake at 400º until the potatoes are soft and starting to turn golden brown.

Note from Amie: If you crowd the pan, the golden brown never happens… as is evident in my photo. They still taste yummy, they just don’t look company worthy, if you know what I mean.

Substitutions: You could probably substitute a package of ranch dressing mix for the grill seasoning if you wanted. You could sub any type of potato, bell pepper or onion quite successfully. I generally use whatever I have that’s on hand before it goes bad.
