It’s been way too long since I’ve posted a Lazy Mom Recipe for us all to enjoy!  This recipe was sent in by Deb W. who had this to say about her super easy recipe….

It is really good; I make this a lot. I like that you can put it all together in the bag and bake it when you need it for dinner!

Hidden Valley® Roasted Potatoes

2 lbs. Small Red Potatoes, Quartered
1/2 Cup Vegetable Oil
1 (1-oz.) Package Hidden Valley® Ranch Seasoning & Salad Dressing Mix

Place potatoes in a gallon size food storage bag and add 1/4 cup oil; seal bag; toss to coat. Add Hidden Valley® Seasoning & Salad Dressing Mix and toss again until the potatoes are well coated.

Put 1/4 cup Vegetable Oil in a cast-iron skillet (make sure you use a cast iron skillet or it won’t turn out as good!) & PLACE THE SKILLET IN THE OVEN while the oven is pre-heating- THIS IS VERY IMPORTANT because you want the oil and skillet hot before you put the potatoes in.

When the oven has reached 450 degrees, put the potatoes in the skillet and bake for 30 to 35 minutes or until potatoes are brown.
